Have any of you ever had a Snack & 1/2 frozen dessert? You used to be able to find them in the frozen section in convenience stores. When I was a little girl I would ride my bike to the gas station and buy them. They were two oatmeal cookies sandwiched with vanilla ice cream in the center. I loved them, and now I can't find them anymore.
Do they still exist out there somewhere? If they do, I wonder if they still taste as good as I remember...
Anyway, memories of that good ol' Snack & 1/2 had me craving oatmeal cookies.
These oatmeal cookies are soft and chewy and just plain delicious. Good even without the chocolate chips!
What you will need:
- 1 cup butter or margarine (softened)
- 3/4 cup brown sugar
- 3/4 cup white sugar
- 2 eggs
- 1 tsp vanilla
- 2 cups flour
- 1 tsp baking soda
- 1 tsp salt
- 2 tsp cinnamon
- 3 cups quick oats
- 2 cups chocolate chips (optional)
Ok, put away your mixers because these taste best if you just hand mix them. Over mixing them is a tragedy!
- Mix butter and sugars together
- Add in eggs, vanilla, baking soda, salt and cinnamon
- Stir in flour
- Stir in oats
- Stir in chips
Good on their own, but fantastic like this....
French vanilla ice cream really makes them something special! :)

ReplyDeleteare you talking about it's-it's?!? those are the only ice cream cookie i know of that had an oatmeal cookie in them. if so, they still make them. you can buy them in the grocery store!!
